Watermelon Gazpacho

Method

Save ½ a cup of water-melon. Process the remaining water-melon, cucumber, onion, jalapeño pepper, red bell pepper, lemon juice, mint, olive oil, and honey, for about 30 seconds in the food processor. It’s all right to put aside certain pieces for texture.

How to Serve?

1- For one hour chill the mixture in refrigerator.

2- Garnish the mixture in a bowl with remaining bits of watermelon and a few mint leaves.
